Kiwano Horned Melon - is a member of the cucumber family and not of the kiwi family. Looks like an oval melon with horns and is very decorative. Picked green, riped orange, the kiwano tastes like a mix oflemon and banana.
The kiwano should have some yellow or orange color to it. Its skin should be firm and unblemished. Never refrigerate kiwanos, as cold destroys their subtropical flesh. Keep in a cool, dry place until ripe. When the kiwano turns orangish-yellow, it is ripe. Do not keep kiwanos with bananas or apples, unless you want to speed ripening.
Slice the horned melon in half lengthwise. Scoop out the green jelly and seeds. Taste to see if you need to add sugar. The shell is inedible.
